| 5. | Taste for seasoning; then stir in cumin seeds and the shallot.

| 6. | 1 / 8 teaspoon cumin seeds, whole OR freshly ground

| 7. | 2 tablespoons cumin seeds, toasted if desired OR 1 tablespoon ground cumin

| 8. | Stir in the jalapeno, garlic and toasted cumin seeds.

| 9. | 2 teaspoons cumin seeds, or 1 { teaspoons ground cumin

| 10. | Just before serving, toss with the cilantro and reserved cumin seeds.
